January 17th 2020: Eat vegetarian all day

I've never intentionally eaten vegetarian for a whole day before. I've also never actively taken pictures of every meal in the day, but here I am.

I started off the morning with a raspberry EmergenC stirred into 8oz of water. A little later, I had a toasted English muffin with smashed avocado and topped with everything bagel ...seasoning? It's also not until right now that I'm questioning if the English muffin breaks the vegetarian rules? I honestly don't know... it was delicious though. I also had blackberries, grapes, and throughout the morning 48oz of water.

I don't usually eat much lunch so I just had some pretzels and a cucumber with roasted garlic hummus. Washed all that salt down with 32oz of water.

For dinner, I made steak chipotle bowls for the family but obviously I made mine vegetarian. I also unintentionally ended up making mine keto. I only had 1/2 cup of regular rice, so I took one for the team and had a blend of frozen cauliflower, mushroom, and asparagus rice.... Yeah, it didn't sound good to me either with the rest of the ingredients. It wasn't bad though. I know it just looks like a mess but it's spinach, the weird rice mix, black beans, red & yellow peppers, onion, tomato, avocado, sour cream, cheese, cilantro, and lime. Also I drank 32oz of water afterwards.
